Ginger Carrot Soup
A silky blended soup of carrot and fresh ginger.

Ingredients
- 1 lb carrots
- 2 tbsp fresh ginger
- 1 onion
- 4 cups stock
- 1 tbsp olive oil
- Black pepper
Method
- 1 Saute the onion and ginger.
- 2 Add carrots and stock.
- 3 Simmer until the carrots are soft.
- 4 Blend until smooth and season.
