- 2 lbs pumpkin
- 2 tbsp ginger
- 1 onion
- 4 cups stock
- 1 tbsp olive oil
- Black pepper
Method
- 1 Saute the onion and ginger.
- 2 Add cubed pumpkin and stock.
- 3 Simmer until soft.
- 4 Blend smooth and season.
