Vegetable and Bean Minestrone
A classic minestrone packed with beans and vegetables.

Ingredients
- 2 cans mixed beans
- 2 carrots
- 2 celery stalks
- 1 zucchini
- 1 cup tomato passata
- 7 cups stock
Method
- 1 Saute the carrot, celery, and onion.
- 2 Add passata and stock.
- 3 Add beans and simmer 25 minutes.
- 4 Add zucchini at the end.
