Ingredients
- 6 egg whites
- 2 cups spinach
- 1 tomato
- 1 tsp olive oil
- 1 scallion
- Black pepper
Method
- 1 Wilt the spinach in a non-stick pan.
- 2 Pour in the whisked egg whites.
- 3 Add tomato and scallion.
- 4 Fold and serve.
