Cauliflower Rice Stir-Fry

Ingredients
- 1 head cauliflower, riced
- 2 eggs
- 1 cup peas
- 2 scallions
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
Method
- 1 Rice the cauliflower.
- 2 Scramble the eggs and set aside.
- 3 Stir-fry the cauliflower and peas.
- 4 Fold in egg and soy sauce.
