Roasted Red Pepper Soup
A smooth soup of roasted red peppers and tomato.

Ingredients
- 4 red peppers
- 2 tomatoes
- 1 onion
- 4 cups stock
- 2 tbsp olive oil
- 1 clove garlic
Method
- 1 Roast the peppers until charred, then peel.
- 2 Saute the onion and garlic.
- 3 Add peppers, tomato, and stock.
- 4 Blend until smooth.
