Turmeric and Ginger Lentil Stew
A warming lentil stew with turmeric, ginger, and greens.

Ingredients
- 1.5 cups lentils
- 1 tsp turmeric
- 2 tbsp ginger
- 4 cups spinach
- 1 onion
- 6 cups stock
Method
- 1 Saute the onion with turmeric and ginger.
- 2 Add lentils and stock.
- 3 Simmer 30 minutes.
- 4 Stir in the spinach.
