Spinach and Mushroom Soup
A light soup of mushrooms, spinach, and garlic.

Ingredients
- 1 lb mushrooms
- 4 cups spinach
- 1 onion
- 4 cloves garlic
- 5 cups stock
- 2 tbsp olive oil
Method
- 1 Saute the mushrooms, onion, and garlic.
- 2 Add the stock.
- 3 Simmer 15 minutes.
- 4 Stir in the spinach.
