Buttermilk Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 large eggs
  • 3 tbsp melted butter
  • 1 cup fresh blueberries

Method

  1. 1 Whisk the dry ingredients in one bowl and the wet ingredients in another.
  2. 2 Fold the wet into the dry until just combined and let the batter rest five minutes.
  3. 3 Cook 1/3 cup of batter per pancake on a buttered griddle over medium heat.
  4. 4 Flip when bubbles form on top, finish 90 seconds more, and stack with butter and syrup.
