Ingredients

  • 500g 00 flour
  • 325g water
  • 10g salt
  • 3g yeast
  • 1 can San Marzano tomatoes
  • 1 ball fresh mozzarella
  • Fresh basil
  • Olive oil

Method

  1. 1 Mix flour, water, salt, and yeast and knead until smooth, then proof three hours.
  2. 2 Stretch each dough ball thin while keeping the cornicione puffy.
  3. 3 Top with crushed San Marzano, torn mozzarella, and a few basil leaves.
  4. 4 Bake at the highest oven temperature on a hot stone for 6 minutes until charred.
