Classic Neapolitan-style pie with San Marzano tomatoes, fresh mozzarella, and basil.

Ingredients
- 500g 00 flour
- 325g water
- 10g salt
- 3g yeast
- 1 can San Marzano tomatoes
- 1 ball fresh mozzarella
- Fresh basil
- Olive oil
Method
- 1 Mix flour, water, salt, and yeast and knead until smooth, then proof three hours.
- 2 Stretch each dough ball thin while keeping the cornicione puffy.
- 3 Top with crushed San Marzano, torn mozzarella, and a few basil leaves.
- 4 Bake at the highest oven temperature on a hot stone for 6 minutes until charred.
