Penne Arrabbiata
Fiery Roman pasta with garlic, chili, and a deeply reduced tomato sauce.

Ingredients
- 1 lb penne
- 2 cans crushed tomatoes
- 1/3 cup olive oil
- 6 cloves garlic, sliced
- 2 tsp red pepper flakes
- Fresh parsley
- Salt
- Pecorino romano
Method
- 1 Warm the olive oil with garlic and red pepper until aromatic but not browned.
- 2 Add the tomatoes and a pinch of salt, then simmer for 15 minutes until the sauce darkens.
- 3 Cook the penne to al dente and toss directly into the sauce.
- 4 Garnish with parsley and a generous shower of pecorino.
