Ingredients

  • 1 lb penne
  • 2 cans crushed tomatoes
  • 1/3 cup olive oil
  • 6 cloves garlic, sliced
  • 2 tsp red pepper flakes
  • Fresh parsley
  • Salt
  • Pecorino romano

Method

  1. 1 Warm the olive oil with garlic and red pepper until aromatic but not browned.
  2. 2 Add the tomatoes and a pinch of salt, then simmer for 15 minutes until the sauce darkens.
  3. 3 Cook the penne to al dente and toss directly into the sauce.
  4. 4 Garnish with parsley and a generous shower of pecorino.
