Focaccia Genovese
Pillowy Ligurian focaccia with deep dimples filled with olive oil and sea salt.

Ingredients
- 500g bread flour
- 400g water
- 10g salt
- 5g yeast
- 1 tsp sugar
- 1/2 cup olive oil
- Flaky sea salt
- Fresh rosemary
Method
- 1 Whisk water, yeast, and sugar, then add the flour and mix until shaggy.
- 2 Cover and proof until tripled in size, about 90 minutes.
- 3 Slick a sheet pan with olive oil and stretch the dough to fit, dimpling deeply.
- 4 Top with rosemary and flaky salt, then bake at 450F for 22 minutes.
