  • 400g water
  • 10g salt
  • 5g yeast
  • 1 tsp sugar
  • 1/2 cup olive oil
  • Flaky sea salt
  • Fresh rosemary

Method

  1. 1 Whisk water, yeast, and sugar, then add the flour and mix until shaggy.
  2. 2 Cover and proof until tripled in size, about 90 minutes.
  3. 3 Slick a sheet pan with olive oil and stretch the dough to fit, dimpling deeply.
  4. 4 Top with rosemary and flaky salt, then bake at 450F for 22 minutes.
