Avocado Toast Supreme

Ingredients

  • 2 thick slices sourdough
  • 1 ripe avocado
  • 1 lemon
  • 2 large eggs
  • Sea salt and black pepper
  • Red pepper flakes
  • Olive oil
  • Microgreens to garnish

Method

  1. 1 Toast the sourdough in a hot pan with olive oil until deeply golden.
  2. 2 Smash the avocado with a squeeze of lemon, salt, and pepper, then spread it thick on each slice.
  3. 3 Poach the eggs in barely simmering water with a splash of vinegar for 3 minutes.
  4. 4 Top each toast with a poached egg, chili flakes, and a tangle of microgreens.
