Avocado Toast Supreme
Sourdough loaded with smashed avocado, chili flakes, lemon, and a perfectly poached egg.

Ingredients
- 2 thick slices sourdough
- 1 ripe avocado
- 1 lemon
- 2 large eggs
- Sea salt and black pepper
- Red pepper flakes
- Olive oil
- Microgreens to garnish
Method
- 1 Toast the sourdough in a hot pan with olive oil until deeply golden.
- 2 Smash the avocado with a squeeze of lemon, salt, and pepper, then spread it thick on each slice.
- 3 Poach the eggs in barely simmering water with a splash of vinegar for 3 minutes.
- 4 Top each toast with a poached egg, chili flakes, and a tangle of microgreens.
