Pollo Adobo

Chicken thighs marinated in dried-chile adobo, then roasted until lacquered.

Ingredients

  • 8 chicken thighs
  • 3 dried guajillos
  • 2 dried anchos
  • 4 cloves garlic
  • 1 tbsp oregano
  • 2 tbsp vinegar
  • 1 tsp cumin
  • Salt

Method

  1. 1 Toast the chiles, then soak in hot water until pliable.
  2. 2 Blend chiles with garlic, oregano, vinegar, cumin, and salt into a thick adobo.
  3. 3 Coat the chicken thighs and marinate at least one hour.
  4. 4 Roast at 400F for 35 minutes until the skin is deeply burnished.
