Pollo Adobo
Chicken thighs marinated in dried-chile adobo, then roasted until lacquered.

Ingredients
- 8 chicken thighs
- 3 dried guajillos
- 2 dried anchos
- 4 cloves garlic
- 1 tbsp oregano
- 2 tbsp vinegar
- 1 tsp cumin
- Salt
Method
- 1 Toast the chiles, then soak in hot water until pliable.
- 2 Blend chiles with garlic, oregano, vinegar, cumin, and salt into a thick adobo.
- 3 Coat the chicken thighs and marinate at least one hour.
- 4 Roast at 400F for 35 minutes until the skin is deeply burnished.
