  • 4 cups masa harina
  • 1.5 cups lard
  • 3 cups chicken broth
  • 2 lbs cooked shredded chicken
  • 3/4 cup red chile sauce
  • Salt
  • Corn husks, soaked
  • Twine

Method

  1. 1 Whip the lard until fluffy, then beat in masa harina, broth, and salt.
  2. 2 Mix the chicken with the red chile sauce.
  3. 3 Spread masa onto each husk, top with filling, and fold tightly.
  4. 4 Steam upright for 90 minutes until the masa pulls cleanly from the husk.
