Tamales de Pollo
Steamed corn-husk tamales filled with shredded chicken in red chile sauce.

Ingredients
- 4 cups masa harina
- 1.5 cups lard
- 3 cups chicken broth
- 2 lbs cooked shredded chicken
- 3/4 cup red chile sauce
- Salt
- Corn husks, soaked
- Twine
Method
- 1 Whip the lard until fluffy, then beat in masa harina, broth, and salt.
- 2 Mix the chicken with the red chile sauce.
- 3 Spread masa onto each husk, top with filling, and fold tightly.
- 4 Steam upright for 90 minutes until the masa pulls cleanly from the husk.
