Tacos al Pastor
Marinated pork sliced thin, griddled with pineapple, and tucked into corn tortillas.

Ingredients
- 2 lbs pork shoulder, sliced thin
- 3 dried guajillos
- 2 chipotles in adobo
- 1/2 fresh pineapple
- 1/4 cup vinegar
- 3 cloves garlic
- Achiote paste
- Corn tortillas
Method
- 1 Blend chiles, garlic, vinegar, and achiote into a deep red marinade.
- 2 Coat the pork and marinate at least three hours.
- 3 Sear the pork on a screaming hot griddle with pineapple chunks.
- 4 Build tacos with onion, cilantro, salsa verde, and a squeeze of lime.
