Carolina Pulled Pork

Whole pork butt smoked low and slow until it pulls apart with a fork.

Ingredients

  • 1 pork butt (8 lbs)
  • 1/2 cup yellow mustard
  • 1/2 cup BBQ rub
  • 2 cups apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp red pepper flakes
  • Hickory wood
  • Hamburger buns

Method

  1. 1 Slather the pork butt with mustard and pack on the rub.
  2. 2 Smoke at 225F until the internal hits 165F, about six hours.
  3. 3 Wrap in butcher paper and continue until 203F internal and probe-tender.
  4. 4 Rest 60 minutes, pull, and dress with cider vinegar sauce.
