Carolina Pulled Pork
Whole pork butt smoked low and slow until it pulls apart with a fork.

Ingredients
- 1 pork butt (8 lbs)
- 1/2 cup yellow mustard
- 1/2 cup BBQ rub
- 2 cups apple cider vinegar
- 1/4 cup brown sugar
- 1 tbsp red pepper flakes
- Hickory wood
- Hamburger buns
Method
- 1 Slather the pork butt with mustard and pack on the rub.
- 2 Smoke at 225F until the internal hits 165F, about six hours.
- 3 Wrap in butcher paper and continue until 203F internal and probe-tender.
- 4 Rest 60 minutes, pull, and dress with cider vinegar sauce.
