Beef Short Ribs

Ingredients

  • 1 plate of 4-bone beef short ribs
  • 1/4 cup kosher salt
  • 1/4 cup black pepper
  • 2 tbsp garlic powder
  • Beef stock
  • Apple cider
  • Post oak
  • Maldon salt

Method

  1. 1 Trim the fat cap and silverskin and coat with salt, pepper, and garlic.
  2. 2 Smoke at 275F over post oak for six hours, spritzing with cider.
  3. 3 Wrap with stock and continue until probe-tender at 205F internal.
  4. 4 Rest 45 minutes and finish with a flake of maldon salt.
