Beef Short Ribs
Massive Flintstone-cut beef ribs smoked until they jiggle with mahogany bark.

Ingredients
- 1 plate of 4-bone beef short ribs
- 1/4 cup kosher salt
- 1/4 cup black pepper
- 2 tbsp garlic powder
- Beef stock
- Apple cider
- Post oak
- Maldon salt
Method
- 1 Trim the fat cap and silverskin and coat with salt, pepper, and garlic.
- 2 Smoke at 275F over post oak for six hours, spritzing with cider.
- 3 Wrap with stock and continue until probe-tender at 205F internal.
- 4 Rest 45 minutes and finish with a flake of maldon salt.
