  • 8 thick slices brioche
  • 4 large eggs
  • 1 cup whole milk
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Butter for griddle
  • Powdered sugar and maple syrup

Method

  1. 1 Whisk eggs, milk, sugar, vanilla, and cinnamon into a smooth custard.
  2. 2 Soak each slice for 20 seconds per side, letting the brioche fully drink the custard.
  3. 3 Cook on a buttered griddle over medium heat until golden, about 3 minutes per side.
  4. 4 Stack, dust with powdered sugar, and serve with warm maple syrup.
