Southern Fried Chicken
Buttermilk-brined chicken in a heavily seasoned crust, fried to a deep mahogany.

Ingredients
- 1 whole chicken, cut up
- 3 cups buttermilk
- 1 tbsp hot sauce
- 3 cups flour
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp black pepper
- Peanut oil for frying
Method
- 1 Brine the chicken in buttermilk and hot sauce for at least four hours.
- 2 Toss the dredge of flour and spices, then coat each piece thoroughly.
- 3 Fry at 325F until deeply golden and 165F internal, about 14 minutes.
- 4 Rest on a wire rack five minutes so the crust stays crisp.
