Ingredients

  • 1 whole chicken, cut up
  • 3 cups buttermilk
  • 1 tbsp hot sauce
  • 3 cups flour
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
  • Peanut oil for frying

Method

  1. 1 Brine the chicken in buttermilk and hot sauce for at least four hours.
  2. 2 Toss the dredge of flour and spices, then coat each piece thoroughly.
  3. 3 Fry at 325F until deeply golden and 165F internal, about 14 minutes.
  4. 4 Rest on a wire rack five minutes so the crust stays crisp.
