Ingredients

  • 2 lbs stew beef
  • 3 tbsp flour
  • 1 onion, diced
  • 3 cloves garlic
  • 4 carrots, chunked
  • 3 yukon potatoes, chunked
  • 3 cups beef stock
  • 1 cup tomato passata

Method

  1. 1 Toss the beef in flour and brown well in a heavy pot.
  2. 2 Soften onion and garlic, then add stock, passata, and a bay leaf.
  3. 3 Add carrots and potatoes and simmer 90 minutes until everything is tender.
  4. 4 Adjust the seasoning and finish with parsley before serving.
