Country Beef Stew
Tender chuck simmered with potatoes, carrots, and a bay-leaf rich tomato broth.

Ingredients
- 2 lbs stew beef
- 3 tbsp flour
- 1 onion, diced
- 3 cloves garlic
- 4 carrots, chunked
- 3 yukon potatoes, chunked
- 3 cups beef stock
- 1 cup tomato passata
Method
- 1 Toss the beef in flour and brown well in a heavy pot.
- 2 Soften onion and garlic, then add stock, passata, and a bay leaf.
- 3 Add carrots and potatoes and simmer 90 minutes until everything is tender.
- 4 Adjust the seasoning and finish with parsley before serving.
