Diner Scrambled Eggs
Slow-stirred scramble with butter, chives, and a finishing pinch of flaky salt.

Ingredients
- 6 large eggs
- 2 tbsp unsalted butter
- 2 tbsp heavy cream
- Flaky sea salt
- Cracked black pepper
- Fresh chives, chopped
- Buttered toast to serve
Method
- 1 Whisk eggs with cream until completely smooth and uniform.
- 2 Melt butter in a non-stick pan over the lowest possible heat.
- 3 Pour in the eggs and stir constantly with a silicone spatula in lazy figure-eights.
- 4 Pull the pan off the heat while the eggs still look glossy, finish with chives and salt.
