Diner Scrambled Eggs

Ingredients

  • 6 large eggs
  • 2 tbsp unsalted butter
  • 2 tbsp heavy cream
  • Flaky sea salt
  • Cracked black pepper
  • Fresh chives, chopped
  • Buttered toast to serve

Method

  1. 1 Whisk eggs with cream until completely smooth and uniform.
  2. 2 Melt butter in a non-stick pan over the lowest possible heat.
  3. 3 Pour in the eggs and stir constantly with a silicone spatula in lazy figure-eights.
  4. 4 Pull the pan off the heat while the eggs still look glossy, finish with chives and salt.
