Blackened Catfish
Catfish fillets coated in spicy blackening seasoning and seared in a smoking-hot pan.

Ingredients
- 4 catfish fillets
- 3 tbsp paprika
- 1 tbsp cayenne
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp dried thyme
- 1 tbsp oregano
- 4 tbsp clarified butter
Method
- 1 Mix the spices into a heavy blackening rub.
- 2 Coat each fillet generously and pat off any excess.
- 3 Sear in a smoking cast iron pan with butter for 2 minutes per side.
- 4 Finish with lemon wedges and a side of dirty rice.
