Ingredients

  • 4 catfish fillets
  • 3 tbsp paprika
  • 1 tbsp cayenne
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp oregano
  • 4 tbsp clarified butter

Method

  1. 1 Mix the spices into a heavy blackening rub.
  2. 2 Coat each fillet generously and pat off any excess.
  3. 3 Sear in a smoking cast iron pan with butter for 2 minutes per side.
  4. 4 Finish with lemon wedges and a side of dirty rice.
