New Orleans Beignets

Ingredients

  • 1.5 cups warm water
  • 1 packet active dry yeast
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup evaporated milk
  • 7 cups flour
  • 1/4 cup shortening
  • Powdered sugar

Method

  1. 1 Bloom yeast in warm water with sugar, then beat in eggs and milk.
  2. 2 Mix in flour and shortening until a soft dough forms, then chill overnight.
  3. 3 Roll the dough out, cut into squares, and fry at 365F until puffed and golden.
  4. 4 Drain briefly and bury in powdered sugar before serving.
