New Orleans Beignets
Light, square fried doughnuts buried under a snowdrift of powdered sugar.

Ingredients
- 1.5 cups warm water
- 1 packet active dry yeast
- 1/2 cup sugar
- 2 eggs
- 1 cup evaporated milk
- 7 cups flour
- 1/4 cup shortening
- Powdered sugar
Method
- 1 Bloom yeast in warm water with sugar, then beat in eggs and milk.
- 2 Mix in flour and shortening until a soft dough forms, then chill overnight.
- 3 Roll the dough out, cut into squares, and fry at 365F until puffed and golden.
- 4 Drain briefly and bury in powdered sugar before serving.
