Chicken Pad Thai
Stir-fried rice noodles with chicken, egg, peanuts, and a tangy tamarind sauce.

Ingredients
- 8 oz rice noodles
- 1 lb chicken breast, sliced
- 3 tbsp tamarind paste
- 3 tbsp fish sauce
- 3 tbsp palm sugar
- 2 eggs
- 1 cup bean sprouts
- Crushed peanuts
Method
- 1 Soak the noodles in warm water until pliable.
- 2 Stir-fry the chicken in a smoking wok, then push to one side and scramble the eggs.
- 3 Add the noodles, sauce, and a splash of water and toss everything together.
- 4 Finish with bean sprouts, peanuts, and lime wedges.
