Chicken Pad Thai

Ingredients

  • 8 oz rice noodles
  • 1 lb chicken breast, sliced
  • 3 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 3 tbsp palm sugar
  • 2 eggs
  • 1 cup bean sprouts
  • Crushed peanuts

Method

  1. 1 Soak the noodles in warm water until pliable.
  2. 2 Stir-fry the chicken in a smoking wok, then push to one side and scramble the eggs.
  3. 3 Add the noodles, sauce, and a splash of water and toss everything together.
  4. 4 Finish with bean sprouts, peanuts, and lime wedges.
