Mongolian Beef
Crispy seared beef in a sweet-savory soy glaze with scallions over rice.

Ingredients
- 1.5 lbs flank steak, sliced
- 1/4 cup cornstarch
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 3 cloves garlic
- 1 tbsp ginger
- 5 scallions
- 1/2 cup water
Method
- 1 Toss the steak in cornstarch and shallow-fry until crisp.
- 2 Combine soy, sugar, garlic, ginger, and water and reduce in the wok.
- 3 Return the beef to the sauce and toss until glossy.
- 4 Add scallions, give it one final toss, and serve over rice.
