Ingredients

  • 1.5 cups farro
  • 1 zucchini, diced
  • 1 red pepper
  • 1 red onion
  • 1 cup hummus
  • 1/4 cup tahini
  • Juice of 1 lemon
  • Fresh parsley

Method

  1. 1 Cook farro in salted water until tender, then drain.
  2. 2 Roast the vegetables at 425F until charred at the edges.
  3. 3 Whisk tahini, lemon, and a splash of water for the dressing.
