Mediterranean Grain Bowl
Farro, roasted vegetables, hummus, and lemon-tahini drizzle in one happy bowl.

Ingredients
- 1.5 cups farro
- 1 zucchini, diced
- 1 red pepper
- 1 red onion
- 1 cup hummus
- 1/4 cup tahini
- Juice of 1 lemon
- Fresh parsley
Method
- 1 Cook farro in salted water until tender, then drain.
- 2 Roast the vegetables at 425F until charred at the edges.
- 3 Whisk tahini, lemon, and a splash of water for the dressing.
- 4 Build bowls with farro, vegetables, hummus, and a drizzle of tahini.
