Loaded Breakfast Bowl
Crispy potatoes, soft-scrambled eggs, smoky bacon, avocado, and salsa verde.

Ingredients
- 2 russet potatoes, diced
- 4 strips bacon
- 4 large eggs
- 1 avocado, sliced
- 1/2 cup salsa verde
- 2 tbsp olive oil
- Salt and pepper
- Fresh cilantro
Method
- 1 Roast the potatoes with olive oil at 425F for 25 minutes until crisp on the edges.
- 2 Render the bacon in a skillet, then crumble and reserve.
- 3 Soft-scramble the eggs in the bacon fat over low heat.
- 4 Build bowls with potatoes, eggs, bacon, avocado, salsa, and a flurry of cilantro.
