Ingredients

  • 2 russet potatoes, diced
  • 4 strips bacon
  • 4 large eggs
  • 1 avocado, sliced
  • 1/2 cup salsa verde
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh cilantro

Method

  1. 1 Roast the potatoes with olive oil at 425F for 25 minutes until crisp on the edges.
  2. 2 Render the bacon in a skillet, then crumble and reserve.
  3. 3 Soft-scramble the eggs in the bacon fat over low heat.
  4. 4 Build bowls with potatoes, eggs, bacon, avocado, salsa, and a flurry of cilantro.
