Tomato Basil Soup
Velvety roasted tomato soup with basil and a swirl of olive oil.

Ingredients
- 3 lbs ripe tomatoes
- 1 onion, halved
- 5 cloves garlic
- 1/4 cup olive oil
- 3 cups stock
- 1 cup fresh basil
- 1/2 cup heavy cream
- Salt and pepper
Method
- 1 Roast tomatoes, onion, and garlic with olive oil at 425F for 35 minutes.
- 2 Blend with stock and basil until silky.
- 3 Stir in cream and warm through, adjusting salt to taste.
- 4 Ladle into bowls and finish with basil and a drizzle of oil.
