Tomato Basil Soup

Ingredients

  • 3 lbs ripe tomatoes
  • 1 onion, halved
  • 5 cloves garlic
  • 1/4 cup olive oil
  • 3 cups stock
  • 1 cup fresh basil
  • 1/2 cup heavy cream
  • Salt and pepper

Method

  1. 1 Roast tomatoes, onion, and garlic with olive oil at 425F for 35 minutes.
  2. 2 Blend with stock and basil until silky.
  3. 3 Stir in cream and warm through, adjusting salt to taste.
  4. 4 Ladle into bowls and finish with basil and a drizzle of oil.
