Lemon Tabbouleh
Bright herb-forward tabbouleh with bulgur, parsley, mint, tomato, and lemon.

Ingredients
- 1 cup bulgur wheat
- 2 cups parsley, finely chopped
- 1 cup mint, chopped
- 3 tomatoes, diced small
- 1 cucumber, diced
- 3 scallions
- Juice of 2 lemons
- 1/3 cup olive oil
Method
- 1 Soak bulgur in hot water until tender, then drain well.
- 2 Toss with parsley, mint, tomatoes, cucumber, and scallions.
- 3 Whisk lemon juice, olive oil, salt, and pepper for the dressing.
- 4 Pour over the salad and chill 20 minutes before serving.
