Lemon Tabbouleh

Ingredients

  • 1 cup bulgur wheat
  • 2 cups parsley, finely chopped
  • 1 cup mint, chopped
  • 3 tomatoes, diced small
  • 1 cucumber, diced
  • 3 scallions
  • Juice of 2 lemons
  • 1/3 cup olive oil

Method

  1. 1 Soak bulgur in hot water until tender, then drain well.
  2. 2 Toss with parsley, mint, tomatoes, cucumber, and scallions.
  3. 3 Whisk lemon juice, olive oil, salt, and pepper for the dressing.
  4. 4 Pour over the salad and chill 20 minutes before serving.
