Lemon Tart
Buttery shortcrust filled with bright lemon curd and dusted with powdered sugar.

Ingredients
- 1.5 cups flour
- 1/2 cup butter
- 1/4 cup sugar
- 1 egg yolk
- 5 large eggs
- 1.25 cups sugar
- 3/4 cup lemon juice
- Lemon zest
Method
- 1 Press the shortcrust dough into a tart pan and blind bake until golden.
- 2 Whisk eggs, sugar, lemon juice, and zest into a smooth curd.
- 3 Pour into the warm crust and bake at 325F for 18 minutes until just set.
- 4 Cool completely and dust with powdered sugar before slicing.
