Ingredients

  • 1.5 cups flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 egg yolk
  • 5 large eggs
  • 1.25 cups sugar
  • 3/4 cup lemon juice
  • Lemon zest

Method

  1. 1 Press the shortcrust dough into a tart pan and blind bake until golden.
  2. 2 Whisk eggs, sugar, lemon juice, and zest into a smooth curd.
  3. 3 Pour into the warm crust and bake at 325F for 18 minutes until just set.
  4. 4 Cool completely and dust with powdered sugar before slicing.
