Mediterranean Chickpea Salad
Chickpeas, cucumber, tomato, and herbs in a bright olive-oil dressing.

Ingredients
- 2 cups chickpeas
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/4 red onion
- 3 tbsp olive oil
- Juice of 1 lemon
Method
- 1 Drain and rinse the chickpeas well.
- 2 Toss with the cucumber, tomato, and onion.
- 3 Whisk olive oil and lemon juice for the dressing.
- 4 Pour over the salad and chill 15 minutes.
