Spinach and White Bean Soup
A brothy soup of white beans, spinach, and garlic finished with olive oil.

Ingredients
- 2 cans white beans
- 4 cups spinach
- 1 onion, diced
- 4 cloves garlic
- 6 cups low-sodium stock
- 2 tbsp olive oil
Method
- 1 Soften the onion and garlic in olive oil.
- 2 Add the beans and stock and simmer 20 minutes.
- 3 Lightly mash some beans to thicken the broth.
- 4 Stir in the spinach until wilted, then serve.
