Quinoa Tabbouleh with Parsley
A whole-grain twist on tabbouleh with quinoa, parsley, mint, and lemon.

Ingredients
- 1 cup quinoa
- 2 cups parsley, chopped
- 1 cup mint, chopped
- 2 tomatoes, diced
- Juice of 2 lemons
- 3 tbsp olive oil
Method
- 1 Cook the quinoa and let it cool.
- 2 Toss with parsley, mint, and tomato.
- 3 Whisk lemon juice and olive oil.
- 4 Dress the salad and chill before serving.
