Lentil and Vegetable Stew
A hearty lentil stew with carrots, celery, and tomato.

Ingredients
- 1.5 cups green lentils
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 1 cup tomato passata
- 6 cups stock
Method
- 1 Sweat the onion, carrot, and celery in olive oil.
- 2 Add lentils, passata, and stock.
- 3 Simmer 30 minutes until the lentils are tender.
- 4 Season with pepper and herbs, then serve.
