Tomato Basil Soup with Olive Oil
Roasted tomato soup blended smooth and finished with olive oil.

Ingredients
- 3 lbs tomatoes
- 1 onion
- 4 cloves garlic
- 1 cup basil
- 3 tbsp olive oil
- 3 cups stock
Method
- 1 Roast the tomatoes, onion, and garlic at 425F.
- 2 Blend with stock and basil until smooth.
- 3 Warm through and season with pepper.
- 4 Finish each bowl with a swirl of olive oil.
