  • 3 lbs tomatoes
  • 1 onion
  • 4 cloves garlic
  • 1 cup basil
  • 3 tbsp olive oil
  • 3 cups stock

Method

  1. 1 Roast the tomatoes, onion, and garlic at 425F.
  2. 2 Blend with stock and basil until smooth.
  3. 3 Warm through and season with pepper.
  4. 4 Finish each bowl with a swirl of olive oil.
