Barley and Mushroom Bowl
Chewy barley with sauteed mushrooms, thyme, and greens.

Ingredients
- 1 cup pearl barley
- 1 lb mushrooms
- 2 cups spinach
- 1 onion
- 2 tbsp olive oil
- Fresh thyme
Method
- 1 Simmer the barley until tender, then drain.
- 2 Saute the mushrooms and onion in olive oil.
- 3 Fold in the spinach until wilted.
- 4 Stir the barley through and finish with thyme.
