Ingredients

  • 1 cup pearl barley
  • 1 lb mushrooms
  • 2 cups spinach
  • 1 onion
  • 2 tbsp olive oil
  • Fresh thyme

Method

  1. 1 Simmer the barley until tender, then drain.
  2. 2 Saute the mushrooms and onion in olive oil.
  3. 3 Fold in the spinach until wilted.
  4. 4 Stir the barley through and finish with thyme.
