Edamame and Brown Rice Bowl

Ingredients
- 1.5 cups brown rice
- 2 cups shelled edamame
- 2 carrots, grated
- 2 scallions
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
Method
- 1 Cook the brown rice until tender.
- 2 Steam the edamame for 4 minutes.
- 3 Whisk soy sauce and sesame oil.
- 4 Build bowls and finish with scallions.
