Cauliflower Fried Rice
Riced cauliflower stir-fried with egg, peas, and scallions.

Ingredients
- 1 head cauliflower, riced
- 2 eggs
- 1/2 cup peas
- 2 scallions
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
Method
- 1 Pulse the cauliflower into rice-sized pieces.
- 2 Scramble the eggs and set aside.
- 3 Stir-fry the cauliflower and peas in sesame oil.
- 4 Fold in egg, soy sauce, and scallions.
