Ingredients

  • 4 cod fillets
  • 1 broccoli head
  • 1 red pepper
  • 1 zucchini
  • 3 tbsp olive oil
  • 1 lemon

Method

  1. 1 Toss the vegetables in oil and roast at 425F.
  2. 2 Add the cod to the tray after 15 minutes.
  3. 3 Squeeze lemon over the fish.
  4. 4 Bake 12 minutes more until the cod flakes.
