Baked Cod with Roasted Vegetables
Flaky baked cod with a tray of roasted non-starchy vegetables.

Ingredients
- 4 cod fillets
- 1 broccoli head
- 1 red pepper
- 1 zucchini
- 3 tbsp olive oil
- 1 lemon
Method
- 1 Toss the vegetables in oil and roast at 425F.
- 2 Add the cod to the tray after 15 minutes.
- 3 Squeeze lemon over the fish.
- 4 Bake 12 minutes more until the cod flakes.
