- 2 cups chickpeas
- 1 cucumber
- 2 tomatoes
- Parsley
- 3 tbsp olive oil
- Juice of 1 lemon
Method
- 1 Rinse and drain the chickpeas.
- 2 Dice the cucumber and tomato.
- 3 Whisk olive oil and lemon.
- 4 Toss with parsley and chill.
