Barley and Vegetable Soup
A brothy soup of barley, carrots, celery, and greens.

Ingredients
- 1 cup pearl barley
- 2 carrots
- 2 celery stalks
- 1 onion
- 2 cups greens
- 7 cups stock
Method
- 1 Saute the onion, carrot, and celery.
- 2 Add barley and stock.
- 3 Simmer 35 minutes until the barley is tender.
- 4 Stir in the greens before serving.
