Spinach and Lentil Soup
A low-salt lentil soup brightened with spinach and lemon.

Ingredients
- 1.5 cups lentils
- 4 cups spinach
- 1 onion
- 2 carrots
- 6 cups low-sodium stock
- 1 lemon
Method
- 1 Saute the onion and carrot.
- 2 Add lentils and low-sodium stock.
- 3 Simmer 30 minutes.
- 4 Stir in spinach and finish with lemon.
