White Bean and Kale Soup
A rustic low-sodium soup of white beans and kale.

Ingredients
- 2 cans white beans
- 1 bunch kale
- 1 onion
- 4 cloves garlic
- 6 cups low-sodium stock
- 2 tbsp olive oil
Method
- 1 Soften the onion and garlic in oil.
- 2 Add beans and low-sodium stock.
- 3 Simmer 20 minutes.
- 4 Stir in chopped kale until wilted.
