Quinoa and Roasted Vegetable Bowl

Ingredients
- 1 cup quinoa
- 1 zucchini
- 1 red pepper
- 1 red onion
- 3 tbsp olive oil
- Juice of 1 lemon
Method
- 1 Cook the quinoa and fluff it.
- 2 Roast the vegetables at 425F.
- 3 Whisk oil and lemon.
- 4 Combine and toss with dressing.
