Roasted Carrot and Lentil Bowl

Ingredients
- 1 lb carrots
- 1.5 cups lentils
- 1/2 cup Greek yogurt
- 3 tbsp olive oil
- 1 tsp cumin
- Fresh parsley
Method
- 1 Roast the carrots with cumin and oil.
- 2 Cook the lentils until tender.
- 3 Build bowls with lentils and carrots.
- 4 Drizzle with yogurt and parsley.
