Vegetable and Barley Soup

Ingredients
- 1 cup barley
- 2 carrots
- 2 celery stalks
- 1 zucchini
- 1 onion
- 7 cups low-sodium stock
Method
- 1 Saute the onion, carrot, and celery.
- 2 Add barley and low-sodium stock.
- 3 Simmer 35 minutes.
- 4 Add zucchini for the last ten minutes.
