Edamame and Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups edamame
- 1 cucumber
- 2 scallions
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
Method
- 1 Cook the quinoa and cool it.
- 2 Steam the edamame.
- 3 Whisk soy sauce and sesame oil.
- 4 Toss everything together.
